Our Olive Oil — From Grove to Table

At Casa de Olivos, olive oil isn’t just a pantry staple — it’s a piece of the land, a taste of local tradition, and a way of life we’re proud to share with every guest.

Surrounded by our own organic olive groves and the centuries-old fields of Traiguera, we produce a small-batch extra virgin olive oil that reflects the character of this special place. The Mediterranean climate, rich soils and careful cultivation give our oil a fresh, nutty flavour and creamy texture that complements everything from simple salads to more complex dishes.

You’ll find a bottle waiting for you in your apartment when you arrive — a flavour of Casa de Olivos from the moment your stay begins. If you fall in love with it (as many guests do), you’re welcome to buy bottles to take home as a delicious reminder of your time here.

Tribute to Traiguera’s Olive Heritage

Traiguera and its surrounding countryside have long been shaped by the cultivation of olives. The landscape here still carries the imprint of olive groves that have fed generations and defined local life for centuries. There are millennial olive trees scattered across the region — living links to the past that still produce fruit today and remind us how deeply olive oil is rooted in the culture and history of this land.

Local producers and mills — including those in the town itself — continue this tradition, pressing olives close to the source and preserving the unique flavours of the Maestrat landscape. Every year, olives from our groves are taken to the local mill on our road, at the peak of ripeness to be cold-pressed, ensuring the highest possible quality and freshest flavour.

Organic, Sustainable, and Local

Our grove is managed using organic principles — no synthetic pesticides or chemicals, just thoughtful care, the rhythms of the seasons and respect for the environment. This approach supports biodiversity, protects soil health and, most importantly, gives you an olive oil that tastes true to the land — pure, vibrant, and full of natural goodness.

The result is a fresh, flavour-rich extra virgin olive oil with depth and character. Whether you’re drizzling it over local tomatoes, dipping fresh bread, or finishing a dish at home, it’s a simple reminder of the land and the seasons that produce it.

If you’ve ever wondered how olive oil is made — from the tree to the bottle — our Olive Harvest Experience brings that journey to life. Available each year during the early November harvest, this experience invites you to join us in gathering olives from our organic trees, take them to the local mill for pressing, and bring home a bottle of fresh, unfiltered Casa de Olivos oil as part of your stay.

It’s a wonderful way to connect with the land, understand the labour and care behind great olive oil, and create a memory that stays with you long after you leave.
